Wessex-FM Gets a Closer Look at Dorset's Very Own Flavour!

The Flavour of Dorset made by a local Michelin starred chef is ready to be unveiled to all at Dorset County Show.
Russell Brown from Sienna restaurant in Dorchester has been working on the paste for weeks.
Four of the ingredients in the creation have been voted for by locals, so the paste had to include fennel, chives, thyme and sweet violets.
Russell admits he's surprised by the choices, "I'm not sure Dorset has got anything that immediately springs to mind. For me, it would have been things like wild garlic because there's such an abundance of it locally. So yes, the flavours were a bit surprising and certainly that sweet violet gave us a few challenges balancing it and getting it right."
The paste will be on the Dorset Food and Drink stand on September the 7th and 8th.
