They're trading sausages for stories at England's Oldest Family butchers in Bridport.
Richard Balson of R J Balson & Son is writing a book about the businesses history to commemorate their 500 year anniversary in 2015, officially on the 12th of September.
R J Balson & Son were recently on a BBC4 documentary where they delved into the history of the Balson's and the meat industry in general. Richard Balson credits the programme with inspiring him to put words on a page about his fascinating history.
Wessex FM spoke to Richard about this change in trade and he told us that although he's enjoying the written challenge, he will still working full-time at his Butchers in town, and is looking to only write the one book.
We asked Richard if, amongst the butchery, there would be any romance or scandal in his book, he replied, "There's going to be all sorts in there! Anyone who knows me, they know I'm a jokey witty sort-of person, there'll be lots of witty anecdotes in there and a few tales and different characters that have come into the shop over the years that stick in my memory, and some of them are really very interesting."
Richard continued to say that there will be more interesting facts about his family too, "One went to the Antarctic with captain Scott, so that's pretty amazing, and there's someone else on my Mother's side of the family and he actually went down on the Titanic, so there's a bit about him as well!"
"I want to take the reader on a journey from 1515 up to present day, and look at how butchery's changed over the years. I'm sort-of two thirds of the way through it really. I've been told by my printers, and I'm using Mr Creed - the local printer- that I should try and get it out before Christmas for stocking fillers."
Richard told us one of his customers has already requested six copies!
