Michelin Chef Shares His Chocolate Expertise

Staff at a Dorchester supermarket were given the chance to learn more about the chocolate they sell with the help of Dorset’s Michelin Starred chef Russell Brown.

Waitrose Partners took part in an evening of training and demonstrations as well as getting stuck in themselves - and taking part in a taste test. Subjects discussed included temperature contrasts and balancing flavours. Russell demonstrated a simple chocolate mousse, some real hot chocolate and honey comb chocolate centres.  

Waitrose Manager Mark Andre said:

“The evening was very informative and Russell's natural style made it a great experience that was appreciated by all who attended. We pride ourselves on the quality of our customer service and work hard to enhance our Partners’ product knowledge to provide the very best shopping experience for our customers. It was a great honour to have a chef of Russell's quality come into our branch at Dorchester, to share some of his vast experience and knowledge. We have specialists in Meat & Fish, Cheese & Deli and Wines, as well as a Patisserie specialist. Their role is to share their knowledge with other Partners and to build relationships with our customers.”

Helen Norcombe, Assistant Section Manager in Customer Service said:
“Everything you ever wanted to know about chocolate and more. Amazing information about the origins and processes involved in the production of chocolate. A wonderful evening was enjoyed by all. Everyone was waiting with anticipation for the first chocolate evening to be held in the Waitrose Dining room by Russell Brown. Everyone was thrilled by the aroma of chocolate floating around the Dining room. Partners were desperate to get the recipe for the wonderful hot chocolate with white chocolate cream floating on top.”

Alex Holtom (Trainee Specialist): “It was a really fun, enjoyable and informative evening. I think it was great that we got the opportunity to increase our knowledge of products we sell and learn new chocolate recipes. I now feel confident in passing this on to our customers, helping to provide excellent customer service.”

Mike Gowans (Fresh Produce Advisor): “It was brilliant having a Chef of Russell's standard in our branch. We all learnt a lot from him. I found out new things about chocolate and ways to use it. It was fantastic.”
